Smoked Salmon Spring Rolls

1 Serving Time: 15 min Ingredients Spring roll rice paper wrap   Kodiak Island Smoked Salmon Persian  Cucumber  Cherry Tomatoes  Green Onion Shredded Carrots Cream Cheese  Spring Mix Lettuce    1 chopped green onion Directions Begin by preparing all chopped ingredients. First, chop cherry tomatoes in halves or fourths. Peal your cucumber and begin cutting the cucumber into strips about the size of the radius of your rice wrap. I like to remove the part with the seeds as it makes for a cleaner taste. Shred your carrots if you did not purchase them already pre-shredded. Next, chop your green onion. Set aside your washed spring mix.  Next, take one dried rice wrap and hold it under warm, running water or, dip it into a bowl of warm water for, about three seconds, making sure there are no dry parts. Kodiak Island Smokehouse Smoked Salmon Fried Rice

Smoked Salmon Fried Rice serves 8       time: 45 min Ingredients 3 c of white rice 5-6 c water (as needed for package directions and type of rice) 3 T oil 2 eggs whisked ½ c chopped onion 1 chopped green onion 4 oz of KIS smoked salmon (remove bones and flake) ½ c frozen peas ½ c grated fresh carrot  ¼ c soy sauce (optional but I think it adds that little some’in some’in) salt and pepper to taste Directions Begin by cooking your rice, in a thick bottom pan add your water and rice. Heat to a boiling covered then reduce the heat to low and cook till tender, about 20 minutes. Once its done set it aside. You can also use left over rice and/or Rice a Roni  (the San Francisco treat…lol )  Next, in a separate large fry pan heat the oil or butter and scramble the eggs. Remove the eggs and set aside.  In that same fry pan heat the remaining oil and add the chopped onion and carrot if its fresh. Saute till tender...

Kodiak Island Smokehouse Smoked Salmon Alfredo

Smoked Salmon Alfredo serves 4       time: 25-30 min Ingredients 2 T chopped onion ¼ c butter ½ KIS Smoked Salmon (remove bones and chop) ½ c diced tomatoes 2 T chopped parsley 2 ½ c  Heavy whipping cream 16 oz package of  fettuccine noodles salt and pepper to taste Directions: In a large sauce pan add enough water to fill ¾ of the way full, add about 1 T of salt to the water, cover and turn the heat on high. After the water comes to a boil add the pasta and cook till tender, drain and hold aside to add to the sauce when its finished. Mean while, melt butter in a large deep fry pan over med high heat. Add the onions and saute until the onions turn translucent or become clear looking, about 2 minutes. Add the salmon pieces and saute on med low another 2 minutes. Slowly add the cream while stirring. Kodiak Island Smokehouse, Smoked Salmon Salad 1 can 15oz of white beans (cannellini or other) ​1/4 pound of KIS​ smoked red salmon, flaked, boned and skin removed 2 cups of spring salad mix or romaine lettuce mix 1/2 of a small red onion, thinly sliced 1/4 cup of fresh Italian parsley, rough chopped 1/4 cup of red wine vinegar 1/2 tsp dried oregano, crushed 1/4 tsp salt 1/4 tsp pepper 3 Tbsp Olive Oil 1/2 of a lemon 1 Tbsp capers 1 baguette or other crusty bread, toasted In a large bowl combine the first five ingredients. Then for the dressing using a emulsion mixer or whisk in a shaker cup or small bowl. Add the red wine vinegar, oregano, salt and pepper to shaker cup. While blending slowly drizzle the olive oil so it will blend with the vinegar to form a dressing.  Pour dressing over salad and toss to coat then squeeze the juice from lemon over salad.
