Kodiak Island Smokehouse, Smoked Salmon Salad 1 can 15oz of white beans (cannellini or other) 1/4 pound of KIS smoked red salmon, flaked, boned and skin removed 2 cups of spring salad mix or romaine lettuce mix 1/2 of a small red onion, thinly sliced 1/4 cup of fresh Italian parsley, rough chopped 1/4 cup of red wine vinegar 1/2 tsp dried oregano, crushed 1/4 tsp salt 1/4 tsp pepper 3 Tbsp Olive Oil 1/2 of a lemon 1 Tbsp capers 1 baguette or other crusty bread, toasted In a large bowl combine the first five ingredients. Then for the dressing using a emulsion mixer or whisk in a shaker cup or small bowl. Add the red wine vinegar, oregano, salt and pepper to shaker cup. While blending slowly drizzle the olive oil so it will blend with the vinegar to form a dressing. Pour dressing over salad and toss to coat then squeeze the juice from lemon over salad.
